This time 12 month ago Terranzo the winemaker and la bella Elizabetta were gearing up to head out to OPERA ON THE LAKE. (The little Cellar Rat was a casa post surgery on a fractured wrist earlier in the week.)

Terranzo the Winemaker and Maria the Little Cellar Rat were up to their ears and whiskers getting ready for the 2019 CHILDERS FESTIVAL LONG TABLE DINNER IN THE WINERY. Memories of wonderful times past … nourishing the present and providing a beacon of hope for the future.

FRENCH LAMB HOTPOT Oven 180C serves 4-6
- 6 X lamb forequarter chops
- 1 X large purple onion diced
- garlic to personal choice
- 3/4 tin chopped tomatoes
- 1 x coffee mug of dry red wine
- a few shakes of soy sauce and Worcestershire sauce
- 2 X sprigs thyme
- 1 X sprig rosemary
- 1 X large bay leaf
- 4-5 basil leaves torn
- few shakes dried Italian herbs
- Salt and pepper to taste
- Cut each chop into 2, removing fat as much fat as possible.
- Lightly brown onion and garlic > casserole dish
- Lightly brown lamb. Meat slices tend to curl so using mini tongs in left hand, lift pieces up a little and with kitchen scissors in right hand make 3 or 4 slits so that meat sits flat in pan. > into casserole dish.
- De-glaze pan with red wine, toms and water + pepper salt + dried herbs> on top of meat in dish.
Liquid should well and truly cover the meat. Add eater if necessary. Poke fresh herbs down under liquid.
Lid on > into oven, cook approx 1 hour. Test with sharp instrument if cooked. Do usual soaking up of any fat with paper towelling.
Steam chunky carrots and add to pot just before serving. Thicken with a little of your usual (GF use Cornflour) and serve with jacket potatoes and green beans.

Just the sort of weather for making a French Lamb Hot Pot with some beautiful lamb chops from BUCKS BUTER SHOPPE- CHILDERS VILLAGE, fresh herbs from the winery Herb patch and some old dry red. That’s what TERRANZO THE WINEMAKER and MARIA THE LITTLE CELLAR RAT are dining on this evening.

You know how much TLCR loves those fresh herbs, almost as much as those flexi-buckets, put to use here as a watering system. Brick in the bottom to allow pots to drain, light and easy to re-cycle the water.

Enjoy chunked with yoghurt for breakfast
Buy firm, sit on kitchen bench for 2-3 days to ripen and develop flavour
for a Delicious Dessert idea: Slice thickly, cook both sides in butter, allow to caramelise then add squeeze vanilla, sprinkle of mixed spice or Chinese 5 Spice a little soft brown sugar, shaving of lemon zest.
Serve with pouring cream, vanilla icecream on bnb plate with knife fork and spoon.
