This means we have a handle on all stages of the process from crushing right through to bottling and labelling. There is always  a sense of excitement and anticipation when a new one is ready for release.

All are made with pride, passion and respect for tradition with no artificial preservatives such as 220 (Sulphur dioxide) nor do they contain egg, milk or fish products (what !!  fish in wine… don’t panic, fish bladders aka ISINGLASS has been used for centuries to clarify wine. )  Here on the Hill, we use  filter papers (think blotting paper)

The flavour  and personality of the grape shines through, tasting of the season, the weather and the hand of the winemaker.
