Just released – 3 MARYS SPARKLING MUSCAT 2018.  30 months on lees means gorgeous rose petal greets you on the nose and palate, moving into citrus and finishing dry. An amazing dancing partner with any seafood, especially some local Red Emperor or Coral Trout.  Cooked simply in some butter…. squisito!!

AVAILABLE FOR TASTINGS AT THE CELLAR DOOR NOW!   The secondary fermentation, where all those beautiful bubbles develop over time, takes place in every single bottle.  A labour of love indeedy!  Something to think about when you savour the finished product.

Capsicum are magnificent at the moment.  The Little Cellar Rat likes to roast them with fat fingers of sweet potato and egg plant and a good massage of EVOO. Throw some Dukkah on them and you have a side dish made in heaven!
