LIMONCELLO is a delightful, refreshing liqueur made using just the rind fresh lemons. the Italians use it as an ‘aperitivo’ to get the digestive juices going or as a ‘digestivo’ to cut through any oils from the meal. Whatever way you look at it, those citrusy flavours are soooo refreshing and it can be enjoyed simply poured over ice. Start with one of your favourite glasses and your almost there!

Port is a very elegant finale to a meal. Give it the company of a stylish glass, some gutsy salty cheese and a muscatel grape or two.
Another idea…. Throw some fat raisins in a screw top jar, give them a soak of a few slugs of port and keep in the fridge. They are just the ticket to have on hand to gussy up some simple vanilla ice-cream. The Little Cellar Rat likes to put put hem in the bottom of the dish before pouring on a Baked Custard.

Our home, crafted from native Hoop Pine, was built in 1911 by the Burton family, pioneer cane farmers in an era where farming was by horse and plough & cane was cut by hand.
We are only the second owners and feel their presence here with us.

Our 3 RIGHT HANDS FORTIFIED RED (PORT) simply delightful. An 18 year old Shiraz matured in both French and American oak then blended has developed some gorgeous flavours of plump prunes and fat raisins. Such a treat with an aged sharp cheddar or pecorino pepato.
