Call it peasant cuisine or ‘cucina povera’ if you dare but that has sustained families for millennia. Red wine added to deglaze all those lovely caramelised adds another layer of flavour and tenderising action. The Little Cellar Rat works on this: 1 coffee mug of red wine for every kg of lamb or beef. Fresh herbs and garlic are de rigour but don’t forget the role of salt and pepper …such a gift to the West

Now that the weather has turned a little cooler in the evenings our THREE RIGHT HANDS FORTIFIED RED makes a very fine and worthy tipple to sit back with after dinner, along with some dark chocolate or matured cheddar… or maybe just on its own. A 20 year old shiraz aged in French oak, luscious and syrupy, redolent of plum pudding and aged fruit cake, it is worthy of its tag ‘ fine, old, tawny’ delizioso!!!
