The Little Cellar Rat makes a curry all year round, in fact several each week (lamb, beef, chicken, tinned salmon …. yes, tinned pink salmon) A favourite is Lamb-based and BUCK’S BUTCHERY CHILDERS always comes up with a top leg, shoulder or barbeque chops.
Use whatever brand of curry takes your fancy or do what TLCR does and start with a commercial one and put your own spin on it, adding cumin, cardamom seeds, whole Chinese Star anise, cinnamon quills and fresh curry leaves. A good mug of sweet red wine is a must.

Red wine added to deglaze all those lovely caramelised adds another layer of flavour and tenderising action. The Little Cellar Rat works on this: 1 coffee mug of red wine for every kg of lamb or beef. Fresh herbs and garlic are de rigour but don’t forget the role of salt and pepper …such a gift to the West

Now that the weather has turned a little cooler in the evenings our THREE RIGHT HANDS FORTIFIED RED makes a very fine and worthy tipple to sit back with after dinner, along with some dark chocolate or matured cheddar… or maybe just on its own. A 20 year old shiraz aged in French oak, luscious and syrupy, redolent of plum pudding and aged fruit cake, it is worthy of its tag ‘ fine, old, tawny’ delizioso!!!
