Rich red soil….beautiful produce

Living in a rural area with rich and diverse seasonal produce provides a yardstick to gauge the progress of the year and the seasons. Avocados, those wonderful green packages of flavour, creaminess and goodness and are on offer at roadside stalls in the Childers-Bundaberg area. So too are capsicum and eggplant…. and who can forget our Sweet Potatoes. If you are staying here for a few days, the Little Cellar Rat will pan roast them for you.
They are the basis for an easy-peasy lunch or add them to a pasta, along with a little pesto and you have a meal!!
