There’s always a thrill when a new wine is released and this week it’s our latest 3 MARYS Sparkling. For many years we’ve made it using beautiful fragrant white Muscat grapes but issues with supply found us turning to outstanding  Semillon grapes.  It’s a case of ‘ doors closing and  windows opening’ because  this Sparkling Semillon  is elegant and delicious,  with flavours of lemon curd and ripe pear.  Oh, does it marry up with  local fish such as Red Throated Emperor cooked simply and quickly, dusted with flour and into the pan…. squisito!
