Here on the Hill we are very broadranging and small c ‘catholic’ in our food likes and we love a good curry. In fact we enjoy one several times a week. The Little Cellar Rat always uses red wine and often the reaction is ‘Quel horreur!!!” Wine in a curry! Hmm… well, if you love a VINDALOO, you might not know that it is in fact not an Indian word but came from the Portuguese term ‘Carne de vinha d’alhos’ meaning ‘meat in garlic wine marinade.’ It means marination of meat especially pork with garlic and wine.
It was introduced into India (especially in Goa and Konkan regions) by the Portuguese. The Portuguese sailors preserved raw ingredients, packed in wooden barrels of alternate layers of pork and garlic, and soaked in red wine.
Later this marination was Indianized by the local Goan cooks. They substituted red wine with palm vinegar and added red chillies and other spices in addition to the marination. Now Vindaloo includes vinegar/lime juice+red chillies soaked and made into a paste.
