Local EGGPLANT are at their best at the moment. They are not always the easiest vegetable to cook but success really starts before you buy.  Only purchase ones that are young, shiny and firm.  If the skin gives when you press with your thumb, DO NOT BUY!!    

Greetings to all the visitors in our region at the moment, especially those from the Southern States.  We have glorious winters here and even the odd foggy morning is tolerable because it usually is a herald of a gorgeous sunny day to come.
